Whole Wheat Fusilli for One

I’m hungry, I’ve come down with a cold, and I’m home alone watching Jon Stewart. What to eat that doesn’t involve opening a can of soup? Quick, easy, salty… Maybe some pasta? With garlic?
Whole Wheat Fusilli for One
1 cup whole wheat fusilli (I love Trader Joe’s fusilli with flax)
1 tablespoon olive oil
1/2 a small onion, sliced
2 cloves of garlic (for the cold!)
1 cup cherry tomatoes
Freshly ground pepper
Kosher salt
Chunk of fresh mozzarella, chopped into bite-size pieces
2 tablespoons chopped Italian parsley
Cook the pasta according to the package. Sauté the onions and the garlic in the olive oil until caramelized, add the cherry tomatoes, and cook until the tomatoes soften. Season with salt and pepper. Turn off the pan and add the drained pasta and the mozzarella. Stir and sprinkle with chopped parsley.
Enjoy wrapped up in a blanket with the remote control close by.
